四川牛筋片
材料:
•牛筋 一斤
•姜片、葱段 各少许
汁料(牛筋用)
•水 约六杯
•八角 两粒
•桂皮 一条
•姜片 一片
•葱 一条
•磨豉酱、糖 各一汤匙
•老抽 两汤匙
•盐 一茶匙
做法:
1. 牛筋洗净。将姜片及葱拍松,放入一大煲滚水里,加入牛筋煮约十五分钟后,盛起。
2. 将牛筋汁料煮滚,加入牛筋,煮至再滚后,改用中火炖两个小时。
3. 将煮好的粘牛筋放入一长方盆内,加汁,冻至凝结,取出切件。
Ingredients

Sauce (for stewed ox twist sinew)
•about 6 glass of water
•2 aniseed
•1 cinnamon
•1 sliced ginger
•1 spring onion
•1 tbsp of yellow bean paste and sugar of each
•2 tbsp of dark soy sauce
•1 tsp of salt
Method
1. Rinse ox twist sinew. Hit the sliced ginger and spring onion. Put them into a big pot with boiling water. Add ox twist sinew in, stew for about 15 mins and until tender. Drain
2. Boil the sauce until done. Add ox twist sinew in. Boil until done. Stew over mild heat for about 2 hours until tender.
3. Put the tender ox twist sinew into a rectangle basin, add sauce in. Freeze until solid. Drain in pieces
