我特别爱吃茶餐厅里的福建炒饭,想在家里做,请问高手大厨们应该怎么做又简单又美味
福 建 炒 飯
材 料 : 2 碗冷飯
1 隻雞蛋
25 克蝦仁
25 克草菇
25 克燒鴨絲
25 克雞肉粒
1 湯匙青豆
1 湯匙粟米粒
1 湯匙甘筍粒
1 粒瑤柱(浸軟)
汁 料 : 1/2 茶匙糖
1 湯匙蠔油
300 毫升雞湯
獻 汁 : 1 湯匙水
1 湯匙粟粉
做 法 : (1) 蝦仁洗淨吸乾水份後切粒;草菇洗淨與青豆同飛水;瑤柱撕幼。
燒熱油炒香雞肉粒及蝦仁備用。
(2) 燒熱油鑊,雞蛋拂勻,入鑊炒至半熟,加入冷飯,炒鬆白飯,加
少許鹽調味上碟。
(3) 將汁料拌勻煮滾,加入草菇、青豆、甘筍粒、瑤柱絲、燒鴨絲、
雞肉粒、蝦粒及粟米粒,滾後轉慢火,埋獻至汁稠,淋於飯面上
便成。
Fried Rice in Fujian Style
Ingredients : 2 bowl rice
1 Egg
25g Shrimp
25g Straw mushroom
25g Roast duck (shredded)
25g Chicken (dices)
1 tbsp green pea
1 tbsp sweet corn
1 tbsp carrot (dices)
1 Dried scallop (soak)
Sauce : 1/2 tsp sugar
1 tbsp oyster sauce
300 ml chicken stock
Thickening : 1 tbsp water
1 tbsp cornstarch
Method : (1) Rinse the shrimp. Cut into pieces. Wash the straw mushroom. Then,
poach the straw mushroom, green pea & carrot. Tear the dried scallop
into shred. Bring the oil to boil. Saute the chicken & shrimp. Set
aside.
(2) Beat the egg. Fry the egg until half done. Then, pour in the rice, season
with salt. Place to the dish.
(3) Boil the sauce ingredients. Then, add straw mushroom, green pea,
carrot, dried scallop, roast duck, chicken, shrimp & sweet corn. Then,
turn the heat to low, add the thickening. Pour it onto the rice.
