The Origins of the "Lotus Egg"

Poached eggs have been around for a long time, the Chinese name "Lotus Egg", originated from its appearance, but when that name was given has been lost. As the story goes, there was once an imperial chef who specialised in making this dish. To win the favour of the emperor, he poached the eggs in the shape of the lotus. Therefore the authentic "Lotus Egg", has the appearance of a lotus, the yolk would be similar to the lotus root, and the skin would be light and crispy, in order to deserve the name "Lotus Egg". When the imperial chef retired he brought the dish to his home town, the dish quickly became popular amongst the people, and became commonly known as the "Lotus Egg".
